Smart Eating With Chef AJ

Chef AJ has been devoted to a plant-based diet for almost 40 years. She is the host of the television series Healthy Living with CHEF AJ which airs on Foody TV. With her comedy background, she has made appearances on The Tonight Show Starring Johnny Carson, The Tonight Show with Jay Leno, The Late Show with David Letterman and more. A chef, culinary instructor and professional speaker, she is author of the popular book Unprocessed: How to Achieve Vibrant Health and Your Ideal Weight, which chronicles her journey from a junk-food vegan faced with a diagnosis of pre-cancerous polyps, to learning how to create foods that nourish and heal the body.

Based in Los Angeles, Chef AJ teaches how to create meals to transform health, how to deal with cravings and food addiction and addresses the emotional side of eating. She is the creator of The Ultimate Weight Loss Program, was the Executive Pastry Chef at Sante La Brea Restaurant in Los Angeles, creator of Healthy Taste of LA and the YouTube cooking show The Chef and the Dietitian. Chef AJ holds a certificate in Plant-Based Nutrition from Cornell University and is a member of the American College of Lifestyle Medicine.

I just got to see Chef AJ at the LaVegFest. She's so energetic! I really can't believe she's in her 50's. She makes me realize life is long and 50 is young! She is my inspiration for when I am in my 50's. I love her:)

Thank you for this video. Within the last week I personally "discovered" Chef AJ - and I haven't been able to get enough of her!!! I'm trying to watch every video I can find, purchased and started reading Unprocessed, etc. This woman is an amazing power-house of a person! Every single things she does is packed full of great information / content and you always walk way learning something (while having a good time and getting your giggles in too). I've yet to regret time spent listening to her, it's that fulfilling for me. And for the first time in my life, someone is really making sense to me. I've struggled so much in my life with health / weight related issues and trying to do what I thought was the 'perfect diet' hasn't worked for me. I thought I was "doing right" by eating lean meats, low carbs (heck, I avoided all carbs!), and eating fats such as EVOO or Coconut Oil, nuts, etc. But I KNOW this isn't working for me - I'm getting heavier (now at 220 at 5' 6"!!!) and more sick (hypertension, GI illnesses, etc) with each passing year following other strategies to a T and doing what I thought was healthy. Everything Chef AJ says just jives with the poor results I've personally seen, and in the few days since I've first found her online, listened, and immediately modified my diet I've already seen a change in how I feel (haven't had to take a prescription GI pill in days now - and I've never gone a day or two without symptoms in 20+ years!) and already dropped a pound!!!! And she clearly comes across as someone who cares, has a mission / purpose, and empathizes. GO CHEF You are making a Thank you, thank you, thank you!

Frankly, I hate to see people comment negatively about limiting fruit. If we all ate an abundance of fresh whole fruit, we would thrive. The only upper limit is our appetite, and fresh is better than dried, but dried is fine. Live on fruit only for a week. Eat as much as you possibly can, and you will never gain weight. You'll also start to feel invigorated. You need more than fruit long term, naturally, but fruit is amazing. And I'd like to point out the research that found people eating a meat diet with the identical calories to others eating a whole food plant diet actually gained more weight. So talking about calories in fruit seems to me to be distracting from the over all result.

Its so frustrating trying to answer questions from concerned family/friends/skeptics about the plant based vegan diet. I wish I could just direct them all to people like this!

I gave up oil, I even make my granola without oil, and it is still very good! Chef AJ, you look great and are so energetic. I am going to check out your book and website. I eat like you, the McDougall way.

Did you attend a traditional culinary school or a plant-based culinary school? With the skills you took from a traditional culinary school, did you experiment on your own how to make many of the same dishes plant-based? You are very inspirational, thank you for everything you do!
