Recommend using only oil then butter basting later. As butter has a low smoke point, you won’t get the desired crust. Only use this tip if you like a good crust on your steak. (Also use a high smoke point oil!)

Yes! Love me some Ribeye. I first remove it from the fridge, rinse, and pat dry. Season with salt and cracked pepper liberally. Let it sit until room temperature. Sear first on all sides with oil in a hot cast iron pan (I use canola or avocado oil). Then, I baste it on both sides in the skillet with Kerrgold butter, crushed garlic, and fresh rosemary. Remove from heat and wrap it in aluminum foil to let it rest for a few minutes. Comes out perfect every time!

Best way to cook it is first coat it in wagyu tallow, season with salt, pepper, garlic/onion powder, then add crushed garlic + thyme and rosemary, and vacuum seal it into a bag.

Put it in sous vide bath, 127 F for 2.5 hours, take it out and pat try. Get a cast iron skillet, max heat so it’s super hot, get some duck fat and steak goes in. Flip once after a crust has formed (30 seconds), turn heat down to low and use a torch to get the edge fat, add butter, baste it for 30 seconds or so and take it out. Don’t overcook this part since the steak is fully cooked already from the sous vide. Let it rest and remember to use a sharp knife to cut. Add some yuzu salt on the side and enjoy.

So heres a tip for everyone who cooks their own steak: salt it the night before, put it in the fridge on a rack. The thicker the steak, the more salt you want to use. Salt both sides.

In the morning flip the steak over, put it back in the fridge. Take the steak out of the fridge 20-30 minutes before you're about to cook it. This process allows the salt to penetrate deep into the meat and also dries out the surface, enabling you to get a very nice, flavorful crust when cooking.

Trim any extra fat off the steak, cut it up into small pieces. Fry it up in your pan, render all the beef fat out. Then get the pan nice and hot (but not so hot that it burns the beef fat or the steak), put you steak in for 1 minute. Don't move it, let it sear. Flip and wait another minute. Turn down the heat to medium, keep flipping it every minute. When you're close to finishing, throw in your butter and aromatics (garlic, rosemary, whatever), and start basting once the butter starts ro brown.

Salt, pepper, honey and throw it in the fridge throw it on a smoker using a mix of maple/cherry and mesquite wood at 225 for 30 min to an hour depending on size. Then do all the things in the video and sear. Idk what it is about honey and mesquite together but I promise if you get the cook temps right the flavor profile is better than any steak you will find in a restaurant.

Air dry in fridge over night, cook in oven on 225 wire until internal temp is 125 (usually hr per pound). Then sear on cast iron grill pan or on traeger 30 seconds each side.

Adding butter to oil does not prevent butter from burning but helps slow it down by diluting its milk solids. However, butter can still brown if exposed to high heat for too long.
