Middle Eastern and North African food is a great kept secret. You love vegan/vegetarian food? Yeah, they've had amazing vegan food for centuries, really. Oh, you like slow roasted or barbecued meats? They got you there. Street food? Some of the world's best street food comes from this part of the world (it's not a coincidence NYC is full of "chicken and rice" places). They have amazing breads, great seafood dishes...

What I think I lack is an understanding of the differences BETWEEN countries, so this video is awesome!! I'm planning a trip to the region next year.

It's hard to find Lablabli ina bowl in the summer season. You were lucky. I wanted to try it this summer, but both restaurants said only in autumn and winter. At least we got to eat Bizerte's exclusive "Sandwich Lablabi"

You are right! The couscous-like texture comes from smid (semolina) which actually is what coucous is made with. They have the same grainy texture but couscous is a bit thicker.
Couscous is basically a few grains of semolina stuck together with water and dried 😂
