Comté is a name-protected cow's milk unpasteurized cheese. Name-protected means real comtés only come from a specific region in France. That means it's the real deal!! This cheese is considered one of the world's greatest cheeses, with the flavors of the raw, mountain pasture-fed cow milk. Pronunciation: Comm-tay Sane An-twon

What does pasteurization mean? In the cheesemaking process, pasteurization is when the milk is heated up to kill bad bacteria. It helps ensure food safety, and the FDA requires it of all cheeses aged less than 60 days to be legally sold in the USA. The problem with pasteurization, however, is that when the bad bacteria is killed, some good bacteria is killed, too. And that good bacteria leads to lots of flavor! That's what makes Comté, and a lot of French cheeses so special: France doesn't have a rule about pasteurization. So French cheeses have intense complex flavors that we just don't find as often in the States.

Pairing Suggestions: Comté is nutty, grassy, funky, and a great melter! It's classically melted in everything from fondue to Croque Monsieur. So get it going over some heat, slice up some chunks of bread or meat to dip in there, and crack open a Rhone red wine. As a pairing principle, any wine made from the same region as the cheese should pair well!

If you can't find this cheese: Look for another unpasteurized French cheese, or ask at your local cheese shop what cheese would be best for fondue. They'll point you in the right direction!
