Beautiful Irish fruit scones made in minutes, that your family and friends will love you for.

Fan Oven 180 c - 356 f
Cook time - 18 minutes
Makes 10 - 12

Recipe

500g flour
15g baking powder
Pinch salt
30g sugar
100g butter “frozen”
2 eggs
200 ml buttermilk
150g raisins “mix dry fruit”

Egg wash - 1 egg yolk with a pinch of salt & pinch of sugar

American

4 cup flour
3 tsp baking powder
Pinch of salt
1/3 cup & 1 tbsp sugar
100g butter
2 eggs
3/4 cup butter milk
1 cup raisins “mixed dry fruit”

- sieve flour & baking powder into large bowl
- add 100g butter & mix
- add salt & sugar & mix
- add fruit
- in a jug mix 2 eggs with buttermilk
- make a well in the centre of your dry mix & add butter milk and mix
- put onto floured surface and knead until smooth
- roll out to 3cm tick and cut out scones
- put onto floured baking tray and brush with egg wash
- place in fridge for 15 - 20 minutes while oven pre heats to 180 c | 356 f
- baked for 18 minutes
- leave to cool for 30 mins
- ready to serve

Rob Oklahoma US here and I've had them before but I've used just butter on them and they are fantastic! I've never made them but since you make it look so easy I'm going to make them now! Thank you!

Nice recipe, my aunt always emphasised to not over-mix the dough and to use cream rather than milk but I see here you are using buttermilk so will try it your way for a change! Thank you for sharing.
