Shaved ice, snow cones, slushies, raspa, kakigōri, patbingsu — whatever you want to call them

This isn't really a recipe. To make a fruit syrup, put some fruit in a pot with a little water and boil it until it's starting to fall apart. Strain it through a sieve, discard the solids and rinse out the pan. Return the juice the pan and combine with up to an equal quantity of sugar. (Be conservative — you can add more later after you taste it.) Boil until the sugar is dissolved and the bubbles start to stack up on each other. Cool and taste. Add more sugar if it needs it, and maybe extra acidity, such as lime juice or balsamic vinegar. Let cool before pouring on ice, which I would pulverize with a blender, or scrape from a wide, frozen pan of water with a large steel chisel. Of you could buy an ice shaving machine.

The moment i heard him say "i need more acid", i was more than prepared to see the man pour some vinegar in

“But I think this syrup needs more acid, so I’m going to supplement it with about half a bottle of cheap, dry white wine.”

I gotta respect how adam used to say he struggled with cooking and filming at the same time and now he just cooks 4 pans of syrup at once

That was the smoothest advertisement transition I’ve ever seen in my life. Respect, Adam. Respect.

A word of warning: When using a chisel, NEVER have the hand that isn’t holding the chisel in front of the blade. I nearly cut one of my fingers off in a woodworking accident. Expensive surgery and months of physical therapy saved my finger, but you can avoid that by always keeping the hand that’s not holding the chisel behind the blade.

“I only put syrup on half of my shaved ice because I like HETEROGENEITY in my food” is something I definitely expected him to say.

Adam's house will smell like an orchard for a couple weeks after this one.

Sorry Adam, I was taught not to eat yellow snow

If you ever want a clear liquid that can freeze well enough and has a taste unlike water, you could always use lemonade or limeade; usually see through and makes for a really good ice base imo.

Snow cones, Brits would call it “what is that?”

Adam ”If you cook it for too long, it may dull the flavor”
Me: “Add balsamic vinegar, it really brightens up the flavor!”

Is nobody gonna talk about how smooth his transitions into ads are?

Almost as smooth as your face’ll be with the sponsor of this video: Harry’s
