love bagels like these, I make ones similar around 60% hydration which gives the a slightly open interior.
The bubbles are from overnight bulk fermentation after shaping, the CO2 releases slowly in the outer skin on the bagel made from the low fridge temp.
these ones look great!

Awesome! My bagel standards are very very low, but this might be something I have to try out. Half hour bus ride, walkable to the UW Arboretum, sounds like a good day to me! Thanks Kenji

Looks a lot like the bagels at Courage Bagels in LA. Super crispy crust and fluffy like sourdough inside. Exciting to see quality "west coast style" bagels taking off.
