If you have two unlinked compressors on your overheads, doesn't it cause problems with the stereo image? Surely better to have a single compressor / inflator across the stereo overheads?

No if you copy the exact settings in both tracks :) and that is what he did

Actually that's incorrect. Having the same setting on both sides isn't the same as having a stereo compressor across the overheads. Look up stereo linked compressor vs dual mono compressor.
