I also found some things that might be useful details while attempting this myself

I got a ssd that was the same size but wasn't OEM so it didn’t work so once I got the OEM ssd I copied the partition and downloaded the offline update onto a usb drive it still didn't work I was ready to give up feeling discouraged but looked up online one last time what it could be then I found a reddit thread saying e100 could be the disc drive and realized I never plugged in the disc drive while doing the update like a dummy because I had the xbox out of the case not thinking not having the disc drive plugged in would be an issue so once I plugged in the disc drive installed the update one more time and it worked so hopefully someone can learn from my experience
