How do ships float? Buoyancy!

The ship floats because the general density of the ship (steel plus air inside the compartments of the hull) is less then the density of the water she's floating in.

Can ships control how deeply they sit in the water? Like, if they're coming up to a bridge that's 1 metre too short for them to get underneath, can they effectively 'duck' underneath it by sinking a metre deeper into the water?
