The recipe is anyone is looking for it in cups. 1 cup plain / all purpose flour (cake flour OK too, Note 1)
▢1 1/4 tsp baking powder (NOT baking soda, Note 2)
▢1/8 tsp salt
▢2 large eggs (50 - 55g / 2 oz each), at room temp (Note 3)
▢3/4 cup caster / superfine sugar (granulated/regular ok too, Note 4)
▢60g / 1/4 cup unsalted butter , cut into 1.5cm / 1/2” cubes
▢1/2 cup milk , full fat (Note 5)
▢2 tsp vanilla extract , the best you can afford (Note 6)
▢1 1/2 tsp vegetable or canola oil

this recipe is LEGIT. i forgot to beat the eggs for 6 mins and only did it for a minute or two but it still came out fluffy and moist! highly recommend this. i reduced the sugar by 30g

I would say this is one of the consistent and nice vanilla cupcakes I baked after trying other recipes. Worth the extra steps on making these cupcakes. Sturdy yet moist.

Okay, I wasn't planning on leaving a review but for this recipe--I just had to! Out of the numerous 'Vanilla Cupcake' recipes I've tried in the past, THIS one is THE only recipe I'll be using. I followed precisely how the instructions asked me to, and I was honestly doubtful at first because there was no way this cupcake would stay soft and moist DAYS after. But oh my god--was I wrong. I made these last week, on August 8, and I am writing this on August 15 to tell you that these cupcakes are STILL soft and fluffy. I know it's not good to keep cupcakes for that long in the fridge, but I had to test it out. So I kept one left to try today and it's obviously not as light and moist as the very first day, but it's not rock-hard and dense like all of the other homemade cupcakes I've tried in the past! Nagi wasn't lying when this recipe said these cupcakes will stay moist after a few days lol. Thank you for sharing this recipe with us, you are a godsend <3

I just tried this and when they say follow every direction, do so. This is a fantastic recipe and will keep it in my core recipes. I actually failed the first time but did it again. If making multiple batches, considering covering the uncooked batter with cling wrap for air not to escape while waiting for its turn. Awesome recipe!

I don’t usually leave comments but I just baked two batches of these cupcakes and this is genuinely my new favourite vanilla cupcake recipe

Sometimes when recipes say that they’re moist, the cake comes out dense.. or moist but in an undesirable way. But the cakes from this recipe were moist, fluffy, airy, and every other good thing. And! They’re not too sweet

Have justt baked them (and ate a couple) so have yet to test how they taste after a few days. But if they’re as true as the comments about the texture, then I have complete trust that they’ll turn out well then too

Thanks! I've finally found the vanilla cupcake recipe I've been looking for. I had extra batter left over (my cupcake holders were small), which I added freeze-dried fruit to and baked in a loaf pan. That also turned out great.
