Rhubarb compote with yoghurt recipe by what shall i cook
Ingredients:
• 4 cups (500g) fresh rhubarb, chopped
• 1/2 cup (100g) granulated sugar
• 1/4 cup (60ml) water
• 1 tsp vanilla extract (optional)
• 2 cups (500g) plain yoghurt
• Honey or maple syrup (optional, for drizzling)
Instructions:
1. Prepare the rhubarb compote:
1. In a medium saucepan, combine the chopped rhubarb, sugar, and water.
2. Cook over medium heat, stirring occasionally, until the rhubarb softens and breaks down, about 10-15 minutes.
