She’s a D&D barbarian. She gets an advantage when her armor is off

I think her stats are higher because she is even more determined to beat you to reclaim her pride, just like she's stronger in the genocide route.

Being onguard/offguard can affect defense, so she's probably wayyy more onguard because she's aware she has no armor and is more vulnerable, meanwhile when she has armor, she doesn't stay very onguard (much more interested in suplexing boulders) as she already has armor, so being attacked wouldn't matter much to her

In UT, your ability to hurt depends partially on your desire to hurt, which is why LV makes you so strong. After the Undyne date, you want to hurt her less than when you were trying to escape and save your life. They can't really decrease your offense in a visible way, so they show this through Undyne's defense. That's my interpretation, anyway.

I think it might be a reference to unarmored defense. Monks and Barbarians get more defense if they have no armor.

My personal theory is that Toby didn't even consider the armor when giving her stats and just added one from her base stats because she's more determined/angrier. Or he was just trolling, he's, well, him, after all.
