Just foraged from a 300 acre private property for 2 days and have 6 quart jars of piñon, 5 jars of ponderosa, and 1 jar of 50/50 piñon/pinderosa packed with turbinado sugar and already releasing some gasses. I am SO EXCITED. I found your article first, then found this video.

Question: do you ever do candied pinecones or pinecone jam or are the green piñon cones still just too hard to eat themselves?

I was going to ask you for this recipe when you mentioned it on the pine nut video. Ty ty ty! Your awesome! I look forward to your videos. Now I need to find the pine cones! I live in Washington state everywhere is pine trees but you mentioned a certain pine tree(?). I saved that video, I’ll check for it. Ty again. Your going to do really good with your videos. My syrup turned out much more transparent and lighter color, is it because i used white sugar?
And also, the gases and fermentation is what we wanted right? Because my jars made a loud POP after opening them.

Is it ok to use piñon pine cones. Do you boil it after to make it a syrup

We take these for granted a lot I live in a place called Tijeras mad piñon we normally just eat the nuts by shaking trees get off of ground but this is interesting
