One of my favorite bars of all time was Audrey Saunders' Pegu Club in NYC, and sadly it is no more. Today I make a signature drink from the menu that will blow you away.

Audrey Saunders' opened Pegu Club in 2005 after an already impressive turn working with Dale DeGroff at Rainbow Room and then Blackbird, as beverage director at the famed Bemelmen's Bar, and others. It's impossible to overstate the kind of mecca that Pegu Club was, the list of famed bartenders who cut their teeth there, and drinks that were invented on those now hallowed grounds is lengthy. Jim Meehan, Brian Miller, Sam Ross, Phil Ward and Erin Williams, to name a few. It was a comfortable and easy atmosphere that churned out absolutely top notch drinks and food, and that is very hard to achieve in NYC. Here Covid 19 has stolen from us all one of the exemplars of mixology, a massive loss to the world of bartending. One of the drinks the bar was famous for was the Earl Grey MarTEAni and it is an extraordinary cocktail despite it's fun and kitschy name.

You'll start by infusing earl grey tea into some london dry gin. I used twinings loose leaf and Ford's gin. 4 tablespoons of tea to a 750ml. bottle. Just put the tea in, shake it up and wait two hours. After that strain and filter it to get as much of the tea particulate out as possible and keep the infused gin indefinitely.

Earl Grey MarTEAni
1 oz. -or- 30 ml. Simple Syrup
.75 oz. -or- 22 ml. Lemon Juice
1.5 oz. -or- 45 ml. Infused Gin
1 egg white
dry shake
shake again and strain into sugar rimmed coupe
garnish with a lemon twist

Dude, the tea matters! High quality earl grey uses bergamot oil instead of “bergamot flavor.” It’s a world of difference and will infuse way better into the ethanol. I’d recommend Rishi or Kilogram.

"Mate" can be delivered in a terrifyingly confrontational fashion in England, "Pal" serves the same purpose in parts of Scotland. Think how "Buddy" can be used on the street in, for example, NYC. Basically, "Claret is imminent" ; )

I have 3 cocktail recipes with tea. I love tea.
The 1st one is a Dublin Fog: Earl Grey tea (a mug), ~30ml vanilla creamer, 30ml Irish Whiskey, and 45ml Irish Cream... and stir it up (it's like an Irish coffee).
The 2nd is modelled after a Penicillin: ginger tea, 15ml elderflower liqueur, 30ml whiskey, 22ml lemon juice... shake it up when hot or cold.
The 3rd is like a mint julep, I called it a Minty Bitch (Slap): 30 peppermint tea (chilled), 45ml bourbon, 20ml honey, 60ml lime... shaken with mint, strain, and serve on the rocks (or one big cube) in a short glass garnished with a lime wedge and a mint leaf.
Tooting my own horn here, but I hope people try these, mess with the recipes, and enjoy drinking them.

Black tea isn't toasted. It's black because the tea leaves are bruised when picked and then allowed to oxidize in the air.

Oolong tea is partially oxidized (some a little, others a lot) and then heated to inactivate the enzymes responsible for oxidiation.

Green tea is unoxidized, the leaves are steamed (Japanese sencha, more grassy) or pan fired (chinese style, more vegetal) to deactivate the enzymes responsible for oxidization.

Pu erh tea is fermented after drying

I am absolutely gonna try this with an earl grey creme infusion (earl grey with vanilla)

Last time I was in Toronto I found a wonderful bergamot gin, titled, slightly horrifically wonderfully "Breakfast Gin".

Made this cocktail for my sister (and myself, of course) as part of her birthday present. She really likes egg white cocktails and she absolutely loved this one. Probably the best cocktail I've ever had the pleasure of both making and drinking.

Infuse a moonshine you like with your favorite tea bags lipton or whatever. And mix it the same way.

The sugar and the lemon should play nice with it as well.
May have to try it myself.

I just made this myself with a local McClintock's Forager Gin, which is super botanical. When Greg talks about the lemon hitting 12345 and then the tea coming in 6789, he wasnt joking! This drink truly evolves in ways you wouldnt imagine. It is fantastic; not just fantastic, fantastical! It's like a cocktail from a fairytale dream. A must try!

I know, this is cliche, but... I made this for my wife and eldest daughter (old enough now). It's my first shaken drink, my first real "made" drink.
Until now I've only ever shopped for drinks here. Thank you so much! Congrats on the million subs I remember 180k or so.
