The Earl Grey MarTEAni is a simple and unique variation on a classic gin sour. Originally created in the early 2000s by Audrey Saunders of New York's well respected Pegu Club. The Earl Grey tea adds notes of bergamot and soft tannins that compliment the dry gin's botanicals. Audrey prefers to use Tanqueray.

INGREDIENTS
- 45ml Earl Grey-infused Gin (1 ½ oz)
- 30ml Simple Syrup (1 oz)
- 22.5ml Lemon Juice (¾ oz)
- 1 Egg White

EARL GREY TEA-INFUSED GIN
- 2 tbsp Earl Grey Tea
- 375ml Gin
- Macerate for 2-4 hours. Strain and bottle.

I just tried this with the 2 oz of gin, and it was awesome. Then I took it a step further and used some orange simple syrup (I made candied oranges last week) and holy mackerel, it was AMAZING! Thank you!

Another point about the straining, if there are particles such as tea suspended in the group it's going to create nucleation points and cause your foam to not last as long/be as thick

I love this drink. After seeing it on a couple other channels, I decided to try it. I initially only infused 6 oz because I didn't know whether I'd like it, but this is one tasty cocktail! So glad you made it! (That way I can use your app for the recipe instead of just a note on my phone. 😁)

I liked this one. I also had some Beefeater laying around. It really seems to hit the bergamot up front & then sort of finishes drier & more tannic. Given the lemon in the drink, I wondered if the bergamot would come through, I think it did. Makes me want to try Lapsang or Oolong in cocktails

Hi Steve, looks good and recipe now in notebook2. However, I will make this over the weekend slightly differently. 40ml gin 5ml Italicus. Only thing missing will be tea tannins. Nick from York

Any reason you wouldn't infuse with a tea bag, for smaller batched anyway? Thoroughly enjoyed this, and will make larger earl grey gin batches in the future!
