Just a tip: A lot of the flavour goes with the stock. the best idea will be to make a reduction of that stock and make it thick and use it as a sauce.

Pro tip from a bbqer. Start in the middle of the rack with your pinky and slide it under the membrane. It’s easier than you think and you get leverage so you never need a paper towel. This is the only way I do it now.
