My Chef’s Guide To Christmas Dinner

Christmas Dinner doesn’t need to be as stressful as we seem to make it year after year. Follow my guide to ease your hosting stress and enjoy more time with your family and friends.

Our feast will consist of a delicious garlic & rosemary roast leg of lamb with mint sauce, which is a great cut of meat for your Christmas dinner. Roasted legs of lamb need minimal prep which can be completed the day before so that you can minimise your to-do list on Chrissy day and simply turn the oven on, heat it up and put it in. Accompanying our lamb are my favourite sides of wagyu fat roast potatoes, roast shallot & sherry vinegar gravy, roasted root vegetables with hot honey, pumpkin seeds & sage and lastly, peas & burrata salad.

Thanks to @Australianlamb for sponsoring today's video.

Another immense vid, Chef - thank you. What I personally take away from it the most is that if things do go a tiny bit astray, not to get stressed or panicky. I am really grateful that the runaway peas, escape artist sage and "The Worst Jug In The World" don;t end up on the cutting room floor

My favourite memories of home are the smell of roast lamb and mint sauce in the heat of summer with veg out of the garden and my parents jazz records all wafting through the house . Magic.

This is THE video I needed. It's my first Chrissie prepping by myself and I've got the in-laws up for it. No pressure 😂

Air fryers work really well for reheating roasted potatoes. It gets them crispy again just like theyre freshly roasted

“And you’re gonna have people like me who like to eat roast potatoes who are gonna eat 9”
That resonated in my soul Andy! 😂❤

My Mom always started holiday dinners on the day before.
When I started helping Mom with those dinners, I also started on the day before. The only things I cooked on the day of the dinners were the things that tasted disgusting, reheated. I started those things just before the dinner. Everything turned out fabulous.
Thanks, Andy. You gave us a lot of great tips. Please keep them coming.
Happy holiday to you & yours. I love your videos.

people do have very strong opinions on many things, but I think you're right with 'a few things' in your gravy, thank you chef

21:57 this explanation/conversation about taking the hot pan with oil out of the oven is exactly how people should teach things and is how I always try to approach giving advice.

There are always small things you can do to make things “better” but at the same time even if you don’t do those things it will still turn out great!

Cooking at home should never be that serious and “should” be about making good/great food while having as little stress necessary…no need for perfection so just do what you’re comfortable with.

andy delicately avoiding a repeat of "Gravy Gate" from last time when everyone told him it wasn't thick enough 🤣

As a fellow chef I really appreciate the way you broke this down. Great encouragement for those home cooks who get intimidated easily. But as a WA boy!, I’m offended there’s no potato salad 😂 great video chef ❤️

Fantastic explanation of breaking all the tasks into day before, then how to organise the timings on the day and especially not having everything finish together at a precise time. This will save a lot of home cooks a lot of stress of trying to do everything on the day instead of spending more time with the people they are cooking for, thank you 🥰

those beetroot leaves - they go great with dill in a soup.
Thing is very simple - just sweat onion and garlic, add cut beetroot leaves, and diced potatos. Once they are blanched, pour over some veg stock and cook for ~15min. Add chopped dill and presto - it's pretty much done. Season to taste with salt and pepper, you might also want to add some cream - either to whiten soup, or just a spoonful in your bowl.

Thanks Andy for pointing out how common coeliac disease/gluten intolerance is, and how cornflour gives the same result without compromising the flavour. I wish my in-laws would make those simple changes so I can partake in all the good things like everyone else.
