Homemade Doritos

Показать описание
Whether you make homemade tortillas or hack this recipe with store-bought, they need to have FLAVOR! ⤵️ Recipe!
From my cookbook, #MoreVeggiesPlease!:
Makes 40 chips
Ten 6” corn tortillas
Zest of 2 limes
1 tsp paprika
½ tsp kosher salt
½ tsp garlic powder
1. Preheat oven to 325°F. Prepare baking sheet with cooking oil spray.
2. Stack tortillas and cut into fourths. Divide tortillas between two large baking sheets in single layers, then spray with cooking oil spray. Bake until crispy and slightly golden brown—15-18 minutes. If they seem a little soft when first removing them from the oven, don’t worry, as they will likely become completely crisp as they cool.
3. While the chips cook, spread out lime zest on a microwave-safe plate and microwave on high for 1 min. Remove from microwave and stir, then microwave again until completely dried out—30 seconds more (continue to microwave it at 15-second intervals until totally dry).
4. Place zest in small bowl and rub the dried zest between your fingers to grind into a fine powder, then add the paprika, salt, and garlic powder and mix well.
5. When finished baking, place hot tortilla chips immediately into a brown paper bag and quickly wipe off any excess oil from baking sheet with a paper towel. Sprinkle half of the seasoning mix over the chips in the bag, then shake to distribute the mix over all the chips. Add remaining half of seasoning blend, shake again, then pour chips back onto the wiped baking sheet to cool completely. Serve immediately or store in the paper bag at room temperature—they will stay crispy and fresh for about one week!
HACK IT: This seasoning blend is money! If you want a shortcut, take 40 store-bought tortilla chips (like Tostitos), and bake at 350°F on a baking sheet for 3 minutes until warm (warming them allows the seasoning to stick), then toss/shake the warm chips with the seasoning blend in a bag until well coated.
