I like the creativity and exploration of what can be possible with this monitor. That said, a much more ideal setup is just a simple m2 MacBook Air with a power banks to connect laptop and external screen. You'll get two screens, a trackpad, speakers, and keyboard without having to turn on your car.

To claim you don't need more than 60 hz is a stretch, as having 120 hz provides a smooth user experience. Scrolling, which everyone does, is way smoother and more enjoyable at 120 vs. 60 hz

A laptop would just be so much more comfortable than bending over to do this. Whenever the car is off, the power to your mini is cut. If people, especially in the US, see your Mac Mini balancing on your console, you have introduced a theft incentive. Your back is going to kill bending over to do this. This is a solution with a problem that has been solved with iPads and Laptops.
