As a Mexican who speaks Spanish and works in a restaurant, please always refer to the chef as “pinche.” It is a term of endearment and implies great respect for the chef… (for legal reasons this is a joke).

My Spanish was at its peak when I worked at a place that had a mostly Spanish speaking kitchen. One lady and I made a deal to improve our language skills. She'd only speak to me in English and I'd only speak to her in Spanish. We both improved a lot.
