CHICKEN NACHOS WITH CORN SALSA! I had the pleasure of hosting my good friend Brooke last week, and we made some easy, delicious recipes, like this one. These nachos are a gluten-free, dairy-free option and SO PRETTY—a great one to serve on a summer afternoon or evening with a glass of rosé!⁣

⁣Chicken Seasonings⁣
2 cups cooked shredded rotisserie chicken⁣
1 tsp coconut sugar⁣
1 tsp paprika⁣
½ tsp garlic powder⁣
¼ tsp chipotle chili powder⁣

1 bag of gluten-free tortilla chips of choice⁣
8-10 oz sharp cheddar cheese, grated (or dairy-free cheddar)⁣

Corn Salsa⁣
1 cup frozen corn, cooked⁣
1/2 cup cherry tomatoes, quartered or diced⁣
3 tb red onion, diced⁣
3 tb chopped fresh cilantro⁣
1 lime, juiced and zested⁣
Salt & pepper to taste⁣

Garnishes: ⁣
@kalejunkie marinated onions (recipe a few Reels back)⁣

Preheat oven to 350F. Shred rotisserie chicken. In a bowl, toss the chicken in the seasonings and set aside. Next, place tortilla chips on a baking sheet, spreading them out evenly. Spread the chicken evenly on top of the chips then add the cheese. Bake for 8-10 minutes until the cheese has fully melted. While the nachos are in the oven, make the corn salsa. When the nachos come out of the oven, top with corn salsa and garnishes. Enjoy!⁣
