🍅INGREDIENTS: 🍅
For The Potato Salad:
🔹 3 pounds small yellow potatoes, scrubbed
🔹 1 tablespoon salt
🔹 ½ cup chopped red onions or shallots (about 1 small red onion)
🔹 3 green onions, trimmed and thinly sliced (white part and green part)
🔹 ½ cup chopped Italian parsley leaves
🔹 ½ cup chopped dill
🔹 ½ cup Kalamata olives, pitted and halved
For The Vinaigrette:
🔹 ¼ cup red wine vinegar
🔹 2 teaspoon Dijon mustard
🔹 1 ½ teaspoons dried oregano
🔹 2 garlic cloves, pressed or finely minced
🔹 1 ½ teaspoon sea salt
🔹 ¼ teaspoon black pepper
🔹 ½ cup extra virgin olive oil

I made this to serve with dinner tonight. And Suzy is so right, it is the only potato salad recipe i need. Out of this world delicious. Don't hesitate. Make it and just try not to eat the entire bowl.

Greetings from Greece. Great version of a potato salad but Dijon mustard isn’t Greek. We only use olive oil vinegar/lemon in the dressing. The garlic is optional most people only put onions and parsley dill capers and olives. It’s better eaten after marinated in the fridge for a couple of hrs.

Love your dress! Thank you so much for this recipe for potato salad without using mayonnaise. My husband hates mayonnaise and I have just not made potato salad because I didn’t know any other way. This sounds so delicious. 😋 edit: I made it and it’s to die for!! I didn’t have that much fresh dill so i used what i had and used dried for the rest. Soo so good! 😋

Midwesterner here. I must say I love my mother's mayo salad. I think the key is you are not supposed to GLOP it in. It is just enough to cover the potatoes and celery, onions, pickles and pimentos. Some folks just add too much. This version looks like a winner. I must try it. Olives....mmmm

Love this potato salad with olive oil dressing! My first intro was french potato salad w/a vinaigrette. There was a wonderful deli in my Chicago neighborhood called Mimi's. Mimi was half Greek & half French. Food there was sooo good. The difference in flavor from putting the dressing on warm potatoes is remarkable. Thanx for posting this recipe. Our farmers market just opened for season. This will definitely elevate Memorial Weekend 😋😁

I love Suzy’s “potato salad health” reference 🤣. It’s ok to throw a little bit of shade when you’re talking about the potential health risks of mayo-based salads at BBQs! I think this is a great recipe - very fresh. Some commenters are saying that it isn’t authenticity Greek due to the Dijon, but you can’t make a vinaigrette without it! 😊👍
