How to make Red Wine Spaghetti (QKatie in Paris Bonus Vlog!)

We know that sipping on red wine during a pasta course can be great -- but how about cooking the pasta IN the red wine?!

Turns out, it's AMAZING. Of course, the Italians found this out a long time ago, it's a classic pasta preparation in Tuscany, where it's called Spaghetti All'Ubriaco. In the U.S. this is sometimes referred to as "Drunken Pasta."

The alcohol burns off the wine, and the wine just gives a subtle sweetness to the noodles. Then mix it with walnuts, cheese and parsley and you've got yourself a lip-smackingly delightful meal.

Ingredients:
water (plus the red wine it should be enough to cover the pasta)
3 1/4 cups dry red wine
Salt
3/4 pound spaghetti
1/4 cup extra-virgin olive oil
4 small garlic cloves, thinly sliced
1/4 teaspoon crushed red pepper
1/2 cup finely chopped parsley
1 cup walnuts (4 ounces), toasted and coarsely chopped
1/2 cup grated Parmigiano-Reggiano cheese, plus more for serving
Freshly ground black pepper

I've had this made with pine nuts, basil and pecorino romano. Since you said anchovies (which I LOVE) I'm going to try it with that as a topping. I'll let you know how that goes... Thank you! :-)

So I took this idea and improvised with what I had at home, which was white wine. So instead, I used spinach, diced tomatos, pesto, garlic cloves, and provolone cheese and it was devine!! Just another idea if like me, you didn't happen to have red wine at home.
