Celebrating the diversity of our fishing and boating community! May is Asian American and Pacific Islander (AAPI) Month and we proudly highlight Jenny Anderson, avid angler from Minnesota, this month.
Growing up in a Korean home in the U.S., traditions from across the ocean have kept the cultural roots for Jenny Anderson of @Girlof10000Lakes . For Jenny and her family, Korean food isn’t just a meal, it’s a powerful connection to where she and her parents were born. Jenny shares the parallel between traditional Korean food and the culture of fishing where she lives in Minnesota.
Recipe for Seng Sun Jun or traditional Korean Pan Fried Fish:
1 pound, white fish fillets sliced into medallion-sized pieces (featured in video: crappie fillets)
2 cups, flour
Salt and black pepper
2 eggs, whisked
4 tablespoons soy sauce
1 tablespoon sesame oil
1 tablespoon rice vinegar
Vegetable or grapeseed oil
Pat dry white fish fillets and make sure they are sliced into medallion-sized pieces
Salt and pepper both sides of the fillets
Add flour to a bowl and whisk eggs in another bowl
Heat up oil on large pan to medium high heat
Place fillets in flour bowl and make sure each piece is evenly coated
Gently use tongs or chopsticks to grab one fillet at a time and dip evenly in egg mixture
Place on hot pan and cook until each side is slightly golden
Make dipping sauce by mixing soy sauce, sesame oil and rice vinegar together
Serve hot alongside dipping sauce and enjoy!
