Chickpea Meatballs

1 can of chickpeas (keep 1/3 of the chickpea juice to act as an egg binder)
1 can of great northern beans (you can keep it just chickpeas, but I added this bean)
1/2 yellow onion Diced
1/4 shredded carrots
1 garlic glove shredded
1/2 cup of breadcrumbs
2 tbsp of fresh parsley
Salt, pepper, cummin
Olive oil
Tomato sauce of your choice

Mash chickpeas and northern beans in a bowl with a masher or fork

Add all the above ingredients and mix well. Take a spoon full portion of the mixture and roll into a golf ball size.

You can bake, air fry, or pan sear. I air fryed mine for about 20 minutes, cooking them 10 minutes, then turn. I coated them with avocado oil before putting them in the air fryer. Place tomato sauce in a pan, then place cooked "meatballs" in sauce." Cook for 5 minutes.
