This video isn’t a demonstration of MIDI 2.0 technically as pitch bend per note hasn’t changed in 2.0. It’s a demo of MPE, which was a late addition to the MIDI 1.0 spec, although it’s been updated for 2.0 including a high resolution control for CC74 or Brightness and Channel Pressure. MIDI CI is taking over for the sender and receiver configuration I believe. MIDI 2.0 is a 14-bit spec, where 1.0 was a 7-bit spec. 2.0 includes MIDI-CI, which is a bidirectional communication protocol that allows auto-configuration between hardware controllers and VIs. 14-bits gives you 16, 348 steps instead of just 128. That’s 2 to the 7th power vs 2 to the 14th power.

holy grace, a few voices at last... I almost couldn't believe there's so little reaction to find already, I mean... is it just me or wtf?

lol, maybe I just overrate the importance of MIDI and the impact on the range of possibilities newly at hand for a whole branch of industry and numberless groups and individuals worldwide, both users and developers alike...
however, nice to find a few people being as well somewhat excited already. who knows, maybe it just became easy in general to miss something like this within the avalanche of continuously multiplying tech amazement which is torrenting down on us increasingly over the last few decades.
hehe, still: MIDI 2.0, duuude! this is something next gen...

This is something I wish pianos could do, although I'd be afraid of having to play extra consistently lol, curious if there's a big part of each key where it sounds relatively the same so you don't have to put your finger exactly at the same position to get a consistent sound.

Anyone know if there's a way to do this with a midi foot controller with each pedal routed to a different note in a scale? Or with 7 pitch bend wheels? Want to do pedal steel chord bends

Slide, not pitch-bend. It is a slide assigned to trigger a pitch-bend MIDI message.
