If your cinnamon sticks can't be broken, you probably aren't even using real cinnamon! Real Mexican cinnamon (aka my favorite cinnamon to use, without exception) is flaky and easy to break up in a molcajete.

Use cassia bark when you’re making curries where the cinnamon flavor is a background flavor and use Ceylon cinnamon if you’re baking.

I have started watching a lot of Rick's videos, I got tired of making "white people tacos" so have been making chicken tacos with dried peppers and some cinnamon from the Mexican market and I will never go back! It is SO MUCH better!

My son in law is a wonderful cook. He is Mexican American. His parents came from Sonora.
For Christmas I got a box of Mexican spices for him from Penseys. I was disappointed to find Ceylon cinnamon included . I wondered why Sri Lankan spice was in the box! Now I know why. Thank you Rick.❤️🎄

They’re both great, and most of the time you want cassia if you’re cooking, it has a stronger spicier flavor that stick out. Ceylons nuanced floral flavors get destroyed and overwhelmed when heated.

There's 8 grades of Ceylon cinnamon. The best is as thin as a pencil.

Ceylon in teas and some savory recipes is awesome. However I've grown up with cassia cinnamon In desserts and is still my favorite
