Why is CAVIAR so EXPENSIVE?!

A very delicate but luxurious treat. Often mixed with sauces or simply eaten with crackers, Caviar is one of the most expensive foods in the world. Prices of caviar per ounce can be as low as $150 to up to $1000 👀
Why? Here’s a quick summary
- Caviar comes from the sturgeon fish. A lot of Sturgeon subspecies are either endangered or near extinction making it hard to find and causing the species to be farmed. Farming food is more expensive than wild caught but at least the species can still stick around
- Sturgeon fish can take up to 30 years to produce eggs, so you caught your fish and you expect it to lay eggs however you now may need to take care of the sturgeon for minimum 8 years to up to 30 years. That’s a long to wait and caring if you ask me 😅
- When harvesting caviar, it all has to go through a whole process before being shipped to the market. The process it goes through is very essential and costs harvesting companies a lot of time and money.
- Then when it comes to using no kill methods in caviar it’s more humane but also more expensive to do. Storing caviar is also very expensive as the environment needs to be very controlling and just right.
