Really appreciate the tip about finishing these by baking in oven for a few minutes. I made these today; they turned out great! I didn't have other ingredients so I only used garlic, spinach, and scrambled eggs.

I'm glad to see that even a native Venezuelan chef can't make arepas without having the interior soft. Makes me think that's the way it's supposed to be. I used to try to get the interior more set but the arepas ended up being tough. An arepa with a soft polenta-like interior is a well-made arepa. Yes?
