The Reina Pepiada arepa, created in the 1950s in Venezuela, is one of the most popular varieties, stuffed with creamy chicken salad and avocado slices. I'm glad to see that even a native Venezuelan chef can't make arepas without having the interior soft. Makes me think that's the way it's supposed to be. I used to try to get the interior more set but the arepas ended up being tough. An arepa with a soft polenta-like interior is a well-made arepa. Yes?
