Every year around this time, I think about doing a gingerbread house video. I think about all the hours of prep, assembly, and final decorations; and after I think about all that for a few minutes, I quickly dismiss the idea, and move on to some other holiday-themed recipe, like these incredible gingerbread biscotti. Crystalized Ginger Hack! Put the ginger and sugar into the food processor and pulse a few times to chop it up. The sugar keeps the cut ginger from sticking to the blades and itself (as much). I'm not sure how well this would work with brown instead of granulated sugar, though. When I've done this for a gingery recipes before I just skipped the brown sugar and increased the amount of molasses. And, you either have to deal with lumps of ginger in the creamed butter/sugar or use half the sugar for creaming and half for ginger (personally I'm ok w/ lumps).
Thanks for this recipe! I'm going to be mailing some holiday goodies this year and need recipes for sturdy treats like this.

my good sir, thank you for posting this recipe. i consider myself to be a biscotti scholar (i peruse and record all biscotti recipes i come across, saving the interesting recipes, testing, then discarding the haters and the losers), and while i was intending to ship gingerbread madeleines to my lucky Christmas cookie recipients this year, i may have to modify my plan to include these, as they look incredible and will probably last longer. much to think about. thanks again.

If you make these in a variety of lengths (by making the first loaf into a triangle instead of a rectangle) you can stack them up into a Christmas tree shape; my mother always used to do that with cranberry biscotti for Christmas parties
