Chayote, Choko, or Sayote is a type of squash that belongs to the gourd family. Technically it’s a fruit but it’s eaten like a vegetable. We mainly add it to soups or stews, but can be eaten fresh in salads.

To grow it, it’s best to let the seed sprout while it’s still inside the fruit. If you attempt to remove the delicate seeds and germinate it, the chances of it sprouting are very low. Leave the fruit on top of your kitchen counter and in a week or more, sprout will appear. Let it grow until it’s time to plant outdoors. If dangers of frost are still present, then plant the entire fruit in a pot with compost mixed in. Rotted fruit should be removed. Plant the seed or fruit horizontally and leave the top of the sprout just above soil level. Keep it indoors in a warm location near a bright window.

Chayote will do best in a sunny location. It is a large, vining plant so make sure to choose a garden location with trellis and plenty of space.

BONUS: All parts of the Chayote plant is edible and this plant make a great privacy screen.

I noticed that your chayote had blisters on it. I have a new chayote sprout that has the same and I was just about to throw it away because I was worried it was infected with anthracnose. I didn't want to plant it out in my garden in case it spreads to my other already established chayote plants. Have you had any problems with chayotes that have blisters (watersoaked spots)? I'm just worried I might be overly paranoid and wasting a perfectly good sprout 😅

I haven't seen you harvest any before. Is this the first time you are planting it. I am in zone 8b Washington State. Planted some last year and got no fruit. I heard the ones from the store won't produce fruit, so I got discouraged. I bought another one to try again next year.

We call it chow chow in South India. We use it to make a delicious gravy dish with yellow lentils and coconut and green chilli paste called "kootu". It tastes very mild and sweet and you can also use it to make stir fry type dishes.
