One does not simply visit Tobago without enjoying some Curry Crab and Dumplings:

Yield: 5 Portions

INGREDIENTS

To Clean Crabs:
7- 8 Whole Crabs, cleaned
Water
3 Tbsp Lime Juice
2 Tbsp Baking Powder

To Season Crabs:
(Cleaned & Washed Crabs)
2 Tsp Salt
1 ½ Tsp Black Pepper
1 Tbsp Minced Garlic
1/3 Cup Green Seasoning
1 Tbsp Chief Brand Curry
1 Tbsp Chief Brand Garam Masala

For The Curry:
3 Tbsp of Coconut Oil
¼ Tsp of Whole Geera Seeds (Cumin Seeds)
4 Carapoulay Leaves (Curry Leaves)
3 Tbsp of Chopped Onions
1 Tbsp of Chopped Garlic
2 Tbsp of Minced Celery
1 Tsp of Minced Ginger
1 Tbsp of Minced Pimento Pepper/Jalapenos
2 Tbsp of Curry Powder
1 Tbsp of Turmeric Powder
2 Tsp of Geera Powder (Cumin)
1 Tsp of Garam Masala
4 ¾ Cups of Water
2 Oz/50 Grams Coconut Powder
3 Tbsp of Chopped Scallions
1 Tbsp Minced Chadon Beni
¼ Cup of Diced Tomatoes
Salt and Pepper to taste

For The Dumplings:
2 Cups Flour
1 Tsp Salt
1 Tbsp Brown Sugar
Water

METHOD

1. Break crabs in halves or quarters depending on the size. Remove any gills. Place crabs into a bowl of water and with a toothbrush; scrub the legs, shells and claws of the crabs paying close attention to remove any dirt or sand that may be present between the crevices of the joints. If there are any fine hairs on the legs, use the back of a paring knife to scrape them away. Wash thoroughly and place crabs back into a bowl. Fill the bowl with water and add the lime juice and baking powder. Mix and allow crabs to sit in this acidulated water to rid of any freshness or smell for about 15 minutes. Rinse crabs and discard water.
2. Using a mallet or heavy object, gently crack the claws of the crab to allow the seasonings to permeate and sauces to get into the shell. Take crabs and season, by adding the salt, black pepper, garlic, green seasoning and both the curry and garam masala powders. Mix well and toss crabs in seasonings to allow it to coat evenly. Let marinate in chiller for a minimum of 30 minutes or up to 3 hours.
3. Make dumpling dough by adding flour into a medium bowl together with salt and sugar. Mix well adding little water at a time and kneading until a stiff but semi pliable dough forms. Cover and let rest for five minutes. Place a medium high sided sauce pan on high heat and fill half with water and bring to a boil. Meanwhile, roll out the dumpling dough to 1/8 of an inch in thickness. Using a cookie cutter or freehand, cut dumplings into 3 inch circles. To the boiling water, add a tsp of salt and insert about 6 – 7 dumplings at a time to boil. Cook for about 5 minutes or until they float to the top. Place cooked dumplings into a clean bowl and drizzle a little vegetable oil over them to prevent them from sticking. Set aside.
4. place a medium iron pot or sauce pan over high heat. Drizzle in the coconut oil and add geera seeds and carapoulay leaves in. Toast for few seconds then add aromatics; onions, garlic, celery, ginger and pimentos. Sauté for 1 minute then add your spices; curry, turmeric, geera and garam massala. Mix and stir well allowing the spices to cook for about 2 minute in the pot over the high heat.
5. Add ¾ cup of the water and cook this curry paste for 3 minutes covered on medium heat.
6. Add the seasoned crabs to the pot. Stir and toss crabs to allow the curry paste to coat it. Cover and let cook for 5 minutes until the shells of the crab turn a bright orange color.
7. Meanwhile mix the coconut powder with the remaining 4 cups of water. Remove cover after five minutes and add this coconut milk mixture. Mix well ensuring to scrape the bottom of the pot with pot spoon to remove any caramelized bits.
8. Cover and bring to a boil. Cook for about 10 minutes, still on medium heat.
9. Remove cover and add the boiled dumplings to the curried crabs. Add the chopped scallions, chadon beni and tomatoes. Stir well to allow all the ingredients to amalgamate.
10. Taste sauce and adjust flavor if needed with salt, black pepper or even minced raw pepper if a spicy kick is desired.
11. Cook for an additional 3 minutes then remove pot from heat. Let curry crabs rest for a few minutes before eating to allow flavors to settle and enjoy.

Ok, as a born Tobagonian, I checked in with my mom who turns 88 today and still lives in Tobago. and I'm sharing some fun facts from her, on seeing this video: When cooking crabs in Tobago, the ends of the claws would be cut off (for hygiene reasons); those spices-curry, geera, massala etc were never used. In fact they were not available in Tobago. The dish is called crab and dumpling, not curry crab and dumpling. The crabs were blue crab, which were widespread on the island and not lagoon crabs. They were washed with young lime buds, and not seasoned. That was added later to the pot. The gravy was made with the eggs of the crabs, and coconut milk.Dumplings were boiled separately. I enjoyed the video though and I think my mom secretly did as well..lol

Thank you, thank you. My first time to Tobago I was told I must taste this, they didn’t have to ask me twice, I’ll never forget being on the beach of Tobago eating this, thinking this life is perfect and I’m so blessed. I’m a great cook and mimic many things I taste from around the world, BUT there’s those few dishes so good, perfect, and culturally based I don’t even try to mimic unless I have an exact step by step but with farther thought, there no beach here like Tobago, so I’m coming back for more!!!

Good morning according to Kezz, granny's are the best. My grandmother and I used to catch the crabs under the cocoa trees when the rain fell. Curry crab with coconut, cassava and cornmeal dumplings .They're all very nice.

My favourite food show to watch! After watching this I actually made dumplings for the first time ..I really dislike the feel of flour on my hands! But the instrustions were really good! 😊 one of my fav episodes. I really like both their personalities.

Yummmm! Here in Bermuda, unfortunately, we do not get fresh crab as there are no rivers but cooked huge king crabs are available in the supermarkets. I remember my summer vacations at Mayaro, my dad going on crab hunts at night and my mom preparing a large pot of tasty curry crab!!!! Would love if you could prepare stuffed crab backs. Nowhere else does it taste as good as Trinidad!, , ❤️. Thanks.
