I am glad you don’t use cream as some Utica restaurants now do. Original, “ authentic “ recipes use 1/2 - 1 stick of butter and a cup of cheese ( and more) to give the dish its creaminess. I prefer the bottled hot cherry peppers( skip the sweet which are cherry peppers in corn syrup, ugh) . Three cherry peppers are for mild variations ; use more for hot versions and try it once with some juice from the cherry peppers bottle for some tang! I don’t like roasted bell peppers; I prefer “ pan fried “ peppers, pan fried with the onions. Some recipes use less tomato, about 1/3 cup, equal to the amount of wine, usually white wine.

Everyone has their own take on riggies. Whatever pleases you, go for it. There is no wrong riggie in my book.

I moved to California from CNY. I have never heard of this when I lived there.
