Katherine Wants: Grilled Calamari

We never squid when it comes to making the best calamari!

Serves: 2
Prep time: 8 minutes
Grill time: 4 minutes
Special tools: BBQ and a sharp knife

Ingredients:
1-2 squid, cleaned and scored tossed in EVOO salt and pepper
1 head radicchio, split
1 cup cherry tomatoes, split
1 shallot, diced
1/4 cup castelvetrano olives, sliced
3 tablespoons EVOO Terra Delyssa
1 lemon juice
1 kosher salt
1 black pepper
1/4 cup fresh herbs garnish (parsley, dill, chives)

Method:
1. Toss the tomatoes, shallots, olives and radicchio into a pan and dress with EVOO, salt, pepper and lemon.
2. Place pan on a hot grill and char the radicchio quickly. Remove and char the squid next.
3. Toss into pan with veggies and head to the plate.
4. Stack squid over radicchio and glaze with tomato mixture.
5. Garnish with fresh herbs and lemon juice to finish.
