Ex sushi chef here! We used to prep our salmon eggs in a similar way known as Ikura! You basically prepare them the same way except at the end, instead of a buttload of salt we marinate the roe in soy sauce, sake, mirin and dashi.

The sake helps get rid of the fishy taste and the sweetness of the mirin helps balance out the saltiness of the soy sauce. The dashi is a nice touch of umami to give you that savory mouthfeel and compliments the oils from the roe.

Great way to separate the eggs from the sack is to put a tennis racket over your bowl and massage the egg sack over it. It’s magic.
