Ingredients
300 g firm tofu
1 red bell pepper
5 fresh shiitake mushroom
50 g edamame (unshelled)
5 g dried black fungus ginger 2 slices
2 cloves garlic
1 scallion
1 tbsp spicy fermented bean paste (doubanjiang)
vegetable oil for frying
For the sauce
1 tbsp light soy sauce
1 tsp dark soy sauce
3-4tbsp water
1 tsp sugar
salt
For starch water
½ tsp starch
1 tbsp water
