I eyed the German Turkey recipe on the website for several years before trying it three years ago. It was a huge hit and the only one I will make again. This year I am taking advice from one of the comments and adding some Pinot Grigio to the cavity with the fruit and a splash inside the roasting bag. You MUST use smoked bacon, and squirt some of the marinade UNDER the skin!

The oven bag is absolutely necessary.

If you want your turkey to be done in less than 10 hours, don’t open your oven door, and baste every 30min. You let all of the heat out, and by the time the oven comes back up to temp; it’s time to open the door again, to let all of the heat out. This was my mistake 25 years ago for my very first Thanksgiving. It’s the worst idea, and it really isn’t necessary, especially if it’s a big bird.
