Some notes on your frustrations and mine. First, did water not convert to source block in that world? Cause you could’ve saved a lot of time watering your fields. (🔷=water, ⬛️= any full block)
⬛️⬛️⬛️⬛️⬛️
⬛️🔷🔷🔷⬛️
⬛️⬛️⬛️⬛️⬛️
The blue diamond in the middle would be a water source block, if two water source blocks were placed one apart.
If you wanted to fit more sugarcane into the sugarcane farm, you could have done this: (🔷=water, again. 🟨=can grow sugarcane on)
🟨🔷🟨🟨🔷🟨🟨🔷🟨
🟨🔷🟨🟨🔷🟨🟨🔷🟨
🟨🔷🟨🟨🔷🟨🟨🔷🟨, etc.
Pillager patrols will spawn 24-48 blocks away from the player on either x or z axis, after being in a certain area for a while, so a wall doesn’t keep them from spawning.
Other people have already said this, but waterlogging a block or putting a light source very close to water prevents water from freezing, in vanilla anyway.
Not sure how much your mods affected any of these mechanics, but yeah.
Anyway, nice video.

8:50 is so true😂 terraforming in minecraft takes 100 years without building the actual structure 💀

Your build is exceptional, nice, niche, and normal. There's nothing wrong with it, as well as you showing me some new techniques. Good looking out for us!!!🎉❤

Would magma blocks keep the water warm during winter?

I would say 100 day videos are popular because they’re not just a “I built a MASSIVE (insert structure) in Minecraft HARDCORE.

They’re good for people who want to see a lot of progress without having to wait 8 weeks in between projects. Plus I like comparing my progress 100 + days in to other people.
