Hi Art - Thanks for posting your video. I'm a fish fillet newbie (hanging head in shame since I live in the Pacific Northwest) and I've been looking at all the helpful YouTube videos. Yours goes into more detail than the others on the trickier second half, and the other hints you share are appreciated. If I ever get to NY I'll check out your restaurant.
