Ingredients

For the meatballs:

500g Beef Mince
250g Pork Mince
1 Onion, finely chopped
1 Garlic Clove, crushed or minced
100g Breadcrumbs
1 x Egg
5 Tbsp Whole Milk
Salt & Pepper

For the Cream Sauce:

Dash of oil
40g Butter
40g Plain Flour
150ml Vegetable Stock
150ml Beef Stock
150ml Double Cream
2 Tsp Soy Sauce
1 Tsp Dijon Mustard

As a Swede, this was interesting to watch👍. In Sweden, we use a 50/50 mix of beef and pork most of the time. First we mix breadcrumps and milk in a bowl, and let it sit for a while. Then we put the minced meat, onion, salt and pepper and an egg in the bowl and mix it together. I do it with my hands because I don't want it to smooth. You can also put in some allspice and some chopped parsil in the mix. I even tried som chopped chili with good result.

Try mixing meat to be almost as pate, and make meat mix of 1/2 beef, 1/4 pork and 1/4 veal. Use parts of meat with as little fat as possible, it is very important so that all sticks together almost like cream. Also onion -caramelize it, than add garlic to fry just a few sec before adding to the meat mix, add also 1 whole egg ( egg white is what holds the mix together and don't scrumble it before, mix it in the meat....and mix, mix, mix). Don't be shy to use salt like you do love it. Add also a bit of nutmag and allspice on top of peper. Make them small to fry better from all sides and add some butter when you fry them.Thats the way I make them...try it and let me know what you think.

Nice! I learned to make köttbullar in Sweden and they're super good comfort food!
Your recipe is exactly traditional, though the finer you can get the mixture the better. Ideally it should be like a pâté. The lady I learned from used a food processor to get everything super fine.

American translation of the recipe for the gravy: 40g = 1/3 C and 150ml = 2/3 C Use costco or smart and final frozen italian meatballs and Voila!

I agree with you, I think Ikea have held quite a bit back intentionally to make people think they can't *quite* make the same product as them and will be rushing to the shops to buy more when they are open! I tried exactly the same ingredients and method as you and I didn't find it matched the Ikea meatballs very much. I found the texture wasn't very soft and more akin to the fresh meatballs you'd find at supermarket chilled aisles.


My mate has a Swedish fiancee who said not to use breadcrumbs and to use a soaked slice of bread (in water) instead, I tried this today and the consistency was much more like the Ikea balls - much softer. I'm glad the 30 mins at 180c cooking time worked for you, I found I needed to leave them for an hour until I was happy with them, I wasn't sure if the cooking time had been worked out for Ikea sized meatballs, like yours mine turned out a lot bigger and I wanted to stay on the side of caution with the cooking.


I know what you mean about the salt with the Ikea meatballs and I've wondered about the fat content too as they cook up from frozen so quickly. I was using 5% mince too and wondered if this had a bearing on the cooking time.

I bet the difference in taste is the soy - they probably use soy instead of msg, which is a common substitution.
