The body and the soul are together interchangeable. Stated by kenjaku not too long ago before this, if toji's body is under a heavenly restriction that was made under his soul, it only make sense for his soul to resurface when using his heavenly restriction. It's because his soul technically wrote the "binding vow" of having no cursed energy to have a heavenly restriction, if that "binding vow" from the original soul is broken, like her grandson having cursed energy, then the original soul from that body will resurface to make sure it is not broken. Basically, you can't overwrite a heavenly restricted body because it's forever tethered to the owners soul through some sort of intangible "binding vow" made when heavenly restricted. I may be wrong anyone is free to correct me but that's how I interpreted this scene.
