My family absolutely lives homemade pancakes. Try this simple and delicious recipe for your family.

Buttermilk Pancakes
Ingredients
2 1/2 cups of self-rising purpose flour
1 1/2 tsp of baking powder
1/2 tsp of baking soda
1/2 tsp of Kosher salt
3 tbs of sugar
1 cup of buttermilk
1 cup of whole milk
1 1/2 tsp of vanilla extract
2 tbs of melted unsalted butter
2 large eggs, room temperature and slightly whisked
1/2 stick of butter.
Directions
Griddle set at 375
Place all of the dry ingredients together in a medium sized bowl and whisk together.
Then add the buttermilk and whole milk.
Melt the butter in the microwave.
Pour the melted butter.
Add the vanilla flavoring.
Whisk in the eggs.
DO NOT USE an electric mixture.
You want to do about 45-50 swirled strokes with the whisk to carefully get out most of the large lumps. There may still be a few small lumps and that is okay.
The key is to NOT over mix your pancake batter.
Let the batter sit for 5-7 minutes before placing on the griddle.
Rub a stick of butter all over the griddle.
Gently drop a 1 1/2 ladle of batter on the griddle. Watch the pancakes rise and form bubbles . This is around 3 minutes. Flip them over and cook for about 2 -3 minutes longer.
Remove the pancakes from the griddle and repeat.
Serve with Maple or pancake syrup.
