Phage Display - How does it work?

Phage display is a revolutionary technology, which has accelerated the growth of biopharma industry by development of therapeutic monoclonal antibodies, as well as helping basic research by identifying protein-protein interactions, identifying ligands for proteins, and searching for molecules that may bind to a receptor.
The technology was spearheaded by many researchers around the world, especially George P. Smith at University of Missouri and Sir Gregory Winter at MRC LMB at Cambridge, UK. For their contributions, they were awarded the Nobel Prize in Chemistry in the year 2018.

if the region is variable, what is stopping the phage from mutating the protein in the amplification step?
