Buckeye Candies!

My family always makes these around Christmas! Our recipe is 1lb butter, 2 lbs confectioners sugar, 1 bag crushed graham cracker crumbs, 2 lbs smooth peanut butter, and 2 tsp vanilla. Dip in melted chocolate.
They turn out absolutely amazing, and the graham cracker crumbs add the perfect amount of texture to the base!

This is one of my favorite Christmas treats! I just love how subtle yet distinct the peanut butter is and how it blends with the chocolate. It’s like the good Reese cups (you know, the small ones 😂)

Someone brought a version of buckeyes that included Rice Krispies in the peanut butter ball… and when I tell you it was a game changer for this Ohioan, I am serious! Delicious perfection.

1 cup creamy peanut butter
5 tbsp room temp butter
1 tsp vanilla

Hand mix.

2 cups powered/confectioners sugar

Hand mix.

Roll in balls.

Refrigerate for AT LEAST 20 mins

Melt 2 cups chocolate (any type, I prefer semi sweet dark!)

Put balls onto skewer and dip into chocolate leaving the “signature buckeye look”

Don’t put back into fridge, just let them air dry on the baking sheet.

Omgggg they look so good! Another thing u could do is make the peanut butter part, then melt chocolate and mix it with a similar amount of condensed milk till it forms a dough. Then wrap some around each little peanut butter ball and roll into a ball in ur hands. Tastes so good!

My aunt has made these for Christmas my entire life... im 34 and never knew buck eye was a type of nut. I spent my whole childhood only questioning in my head why they would give such a great treat such a morbid name
