Cool video. Their Confederate counterparts had something similar called Sloosh made from a ration of cornmeal. You'd fry your pork as above and add cornmeal to the hot grease to form a crude dough, wrap it around a ramrod and cook it over a fire. I've tried it before - it's not bad, but bacon makes everything taste good.

I''d probably throw some fried onion in there to help soak up the grease even more and add sweetness and something vegetal, not sure how traditional that'd be, but that looks tasty. Definitely calorie rich but man I can see why anybody would love that.

I think they broke the hard tack up in a bag so it was a lot crumbler and they would mix it all together with the grease, pork and water almost into a paste and then fry that
" paste."

First - mistake a step, folks. Break hardtack into pieces, soak in warm water. then add to hot fat.

So easy for us all to try it and say "not that bad". . . But imagine hardtack is the main course meal everyday over and over again. Only so many ways to try and make it taste better. I do have three huge bags of it vacuum sealed for emergency situations. I've eaten it a few times when money had been tight and while it's not bad, I can't imagine how tiring it would have been for sailors, as well as gorund forces for months at a time!!!

Ok, to note, while they didn't have garlic and onion powder... Soldiers would also "forage" for food stuff, so there is a chance they would have wild garlic, onion, or even carrot "taken" from field or farm.

They would scrounge onions, carrots, potatoes, turnips etc. Either eat good or trader for booze, tobacco, gun powder etc.

The trips back then also had access to traveling salesmen who did food stuffs. Some had beans, some foraged for wild onion and garlic, a few had eggs to fry up to put on top. Also ya gotta remember. McIllenys Tabasco came along about then. I got a feeling something like that made the rounds.

Now you need to make "Sloosh". The Confederates issued cornmeal, so they made something similar, but using the cornmeal and water with the grease and salt pork to make more of a thick mush.
