Cinnamon Roll Pancakes are life changing! Today I’m sharing my brother’s Buttermilk Pancake recipe with a Cinnamon Roll twist—a buttery, cinnamon sugar filling!

Cinnamon Roll Pancakes
1 stick unsalted butter, melted and cooled slightly
¾ c. brown sugar
1 Tbsp. cinnamon
2 c. all purpose flour
1 Tbsp. sugar
1 tsp. baking powder
1 tsp. baking soda
½ tsp. salt
1 ¾ c. buttermilk (I make my own with 1 Tbsp. white vinegar topped off with milk)
2 eggs
2 Tbsp. unsalted butter, melted and cooled slightly
extra butter for greasing the griddle
1 c. powdered sugar
¼ tsp. vanilla extract
1-2 Tbsp. milk
Mix the 1 stick of melted butter, brown sugar, and cinnamon together with a whisk or fork. Pour into a quart sized Ziploc bag. Gently squeeze out any air and seal the bag. Set aside to continue cooling (it should thicken into a paste-like consistency).
In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt. Add the buttermilk, 2 eggs, and 2 Tbsp. melted butter. Whisk to combine (there still might be a few lumps in the batter—that’s ok!). Preheat griddle or electric skillet to about medium (you might have to adjust the temperature depending on what skillet you use). Grease the griddle with butter. Use a 1/3 c. measure to pour the batter onto the griddle. Snip one of the bottom corners off of the bag of cinnamon filling. Pipe the filling in a swirl pattern onto each of the pancakes. Wait for small bubbles to appear on the surface of the pancakes then flip to cook on the second side for an additional minute or so (both sides should be golden brown). Remove the pancakes and wipe down the griddle with a damp paper towel if there is any excess melted cinnamon sugar filling (it will burn if you keep it on there!). Butter the griddle again and continue making pancakes.
For the glaze, whisk together the powdered sugar, vanilla, and 1 Tbsp. of milk at a time until you reach your desired consistency. Pour the glaze (or maple syrup) over the pancakes. ENJOY!
