How to make Fluffy Cinnamon Roll Pancakes?😍 This easy pancake recipe is gluten-free & lactose-free! The combination of the soft and fluffy pancakes with the caramelized cinnamon filling is just perfect🤩 If you aren’t coeliac/intolerant to gluten, you can of course use all purpose wheat flour in this recipe. Same with lactose-free products, use only if needed!☺️
this recipe makes about 2 servings:
For the Pancakes:
1 egg
3/4 cup (lactose-free) Greek yogurt (180 ml)
1 tablespoon maple syrup
1 teaspoon vanilla extract
1/2 cup all purpose gluten-free flour mix (120 ml)
1 1/2 teaspoons baking powder
For the cinnamon filling:
3 tablespoons melted lactose-free butter
4 - 5 tablespoons brown sugar
1 teaspoon cinnamon
For the icing:
1/4 cup lactose-free Greek yogurt
1 tablespoon maple syrup
1/4 teaspoon vanilla extract
1. Mix the wet ingredients together
2. Add the dry ingredients and stir until combined
3. Mix the ingredients of the filling together and transfer it to a small ziploc bag and cut a tiny hole to one corner (or use a piping bag)
4. Scoop pancakes onto a non stick skillet. Make a swirl with the filling on top of each pancake. Cook for a couple of minutes on each side
5. Serve with the yogurt icing
