Fermenting and drying cocoa beans from cocoa pods/fruits at home. So I've been making chocolate as a hobby for a while and wanted to understand the fermenting and drying process more. Here is my first attempt at fermenting cocoa beans straight from the fruit and then drying them under the sun.

I didn't know that it take
6 month for the cocoa bean to pod to blooms then wait for 10 to 14days to harvest.
7 days fermented
5 days in sun

Y’all keep missing the point, what do you do between those ferment stage on a daily, i.e. do you mix it every hour or open for air each ....

Thanks for the video! I am about to try to make chocolate from cocoa pods as well. Can you elaborate on how you made your box set up? Are the beans elevated enough to be out of the draining liquid? Do you think the plastic basket is necessary for that? What kind of yeast did you add? Do you think yeast is necessary or did you add that because your fermentation was not going as well as you hoped? Thank you for any feedback you can give. It seems like there is not enough information out there about the fermentation step of this process, even though it would appear to be an error prone process and the ingredients are very expensive to get shipped.

Do you rinse before putting it out in the sun to dry? Also now it's dried from the sun do you have to roast it?

Hi! I’ve followed the steps, and after one day of fermenting, I’m seeing some fuzzy white mold? Does this mean my whole batch is bad now? :(. I’m in Haiti, and we have fresh cacao on trees here. I am using a large plastic bin lined with banana leaves and a drainage space at the bottom of the cacao. What do you think I should do now?
