you can use the /effect command but instead of putting in a real number for the seconds just type "infinite". NOTE: this only works with the /effect command. custom potions and other command block created items dont carry this feature.

You can use resistance 255 to get infinite heart health boost will take a screen so resistance is good too code: /effect @s resistance 255 (true)
